A Japanese Sake Pairing Experience Born at the Red Brick Sake Brewery

Starting from the nationally designated Important Cultural Property Red Brick Sake Brewery, this premium sake tour offers a pairing experience of Japanese sake brewed using Asukayama Yeast, harvested in the Asukayama area, together with carefully curated cuisine.
Through this tour, participants will experience—by seeing, touching, and tasting—the history that supported the modernization of Japanese sake, as well as flavors that are deeply rooted in this unique land.

Learn from the Sacred Site of Modern Japanese Sake: The Red Brick Sake Brewery
Located in Kita City, Tokyo, the former Brewing Research Institute First Factory (commonly known as the Red Brick Sake Brewery) was established during the Meiji era and played a pivotal role in the modernization of Japanese sake and the development of the alcoholic beverage industry in Japan.
Known as the “Sacred Site of Modern Japanese Sake,” this historic location serves as the starting point of the tour, where participants can gain a hands-on understanding of how Japanese sake evolved through modernization by exploring the actual brewing facilities.
On the day of the tour, participants will walk through the original equipment preserved at the Red Brick Sake Brewery while a licensed Sake Sommelier (Kikizakeshi)—who is also able to provide guidance in English—clearly explains the background of modern sake’s birth and the technological innovations behind it.


A Terroir Pairing Experience with Asukayama Yeast
After the brewery experience, the tour moves to Asukayama, where guests will enjoy a specially designed pairing course at Restaurant Apron Mark.
The pairing features Japanese sake brewed using Asukayama Yeast, which was collected in the Asukayama area, including Kijoshu “Byakko (White Fox)” and Hiei.
By enjoying sake and cuisine in the very place where the yeast originated, participants can experience Kita City’s unique terroir and storytelling through all five senses.


An English-Friendly Sake Experience for International Visitors
This tour is guided by a certified Sake Sommelier who holds qualifications for English-language guidance, ensuring that international visitors to Japan can participate with confidence.
The program is designed to be enjoyable for a wide range of participants—from sake beginners to those with a deep interest in Japanese culture and fermentation.
